
Finding a light and healthy, yet satisfying soup can be tricky. This one is just that!
This soup recipe is one of my all-time favorites and quickly became a go-to in our house. Eli was just out of town for work this week and I made it TWICE.
Most soups require basic chicken or beef broth, making the overall taste very similar when all is said and done. This one uses a Tuscan broth which makes it taste so much different than many of our other “go to” soup recipes.
This soup can be made in as little as 10-15 minutes and requires little-to-no meal prep. These are all ingredients I keep in my pantry at all times and find myself making this on nights we forgot to plan or don’t feel like “cooking.” I recommend pre-cooked shredded chicken, but you can definitely make this with cooked chicken breast or tenderloins as well!
